In quarantine one of my favorite hobbies has been cooking, creating new dishes, and re-visiting family recipes. I would like to share a couple of my delicious eats for all to try - perhaps this weekend for Valentine’s Day! You won’t regret creating theses dishes and adding your own your special touches. This is my love for food. Let's begin!



LEMON TEA is my southern twist on a long island iced tea. Refreshing yet tingly!


Half-cup of lemonade / Half-cup of sweet tea / One shot glass of Hennessy / Lemon zest for garnish



MINI STUFFED PEPPERS


Ingredients:

Prosciutto

Mini sweet peppers

Jalapeno cream cheese


Directions:

Split and de-seed peppers. Spoon in jalapeno cream cheese. Wrap prosciutto around peppers. Bake on non-stick pan at 250 for 25 minutes.


CAULIFLOWER MACKIN' CHEESE


Butter

Cheese

Seasonings

Heavy Cream

Minced Garlic



Step One:

Cut cauliflower head into nugget sized pieces. Toss pieces in olive oil / spread onto non-stick pan. Roast in oven at 300 for 15 minutes, watch until golden.


Step Two:

In medium pan add two tablespoons of butter and a scoop of minced garlic over medium heat. Add one cup of heavy cream and seasonings (salt, pepper, onion powder, and dash of nutmeg). Let mixture come to a light rumble then add cheese (mozzarella, sharp cheddar cheese, and parmesan). Reduce to low heat until cheese is velvety smooth then turn off heat completely. Let sit for a moment.


Step Three:

In a mixing bowl add cheese sauce, shredded cheese (optional), and your cauliflower pieces - toss lightly so pieces won't break apart. Now time for the good part - bake mixture in non-stick casserole pan for 30 mins at 300. I know you can smell the goodness in the air - once browned on top, let cool, and enjoy!


I hope you find these recipes in good health and wellness. Remember you can always personalize these recipes. For example, you can sprinkle bacon or crab meat on top of your cauliflower mac n' cheese. Substitute the jalapeno cream cheese with veggie cream cheese, if you don't like the heat. No matter the way, get in the kitchen and have some fun!
